After three years of research and recipe testing, Jenny Sheetz and her daughter, Lauren Matosziuk, have co-authored “Cooking for a Healthy Lifestyle: Delicious recipes for families whose members have gluten and other food allergies”.
“Restricted diets do not have to be a prison sentence to a life of boring food. With some new skills, and a bit of imagination, great tasting meals can be prepared,” said Sheetz, president of St. Joseph Institute and a certified nutritionist, in a recent press release.
The new cookbook, published by Morris Press Cookbooks, provides 200 pages of recipes and advice. It includes a formula for making gluten-free flour that can be substituted for wheat flour in most recipes. Also included are recipes for salad dressings, sauces and condiments like ketchup and mayonnaise, items that often contain ingredients which must be avoided by people with food allergies. The book includes sections on breads and rolls, soups and salads, vegetables and side dishes, main dishes, desserts and this and that.
While the cookbook will appeal to people with gluten and other allergies, it offers delicious, nutritional meals that every family member can enjoy. With a concern for good health, the recipes use smaller amounts of sugar, salt and fat, and include the ingredients that science has determined are best for promoting wellness and protecting against disease. Directions are also provided so that dishes can be prepared without dairy, eggs or other products to which people may be allergic.
According to the release, Sheetz began cooking at age eight in the first Sheetz store, founded by her father in Altoona. A few years ago, both she and her daughter discovered they cannot digest gluten, the protein component of grains. Refusing to sacrifice the tastes they loved, a test kitchen was developed in their home. “Cooking for a Healthy Lifestyle” is the result of their efforts. The St. Joseph Institute has the only gluten-free commercial kitchen in Pennsylvania and the resort’s dining room serves delicious gluten-free dishes to its guests.

Sheetz has a Masters degree in Christian Counseling. In addition to her degree as a Certified Nutritionist, she has extensive training in the healing arts and sciences, including therapeutic massage, Neuromuscular Therapy, Process Acupressure, CranioSacral Therapy, Biofeedback and the use of Cold Laser Therapy.
